Regarded a long time as a simple precursor of Vitamin A, beta-carotene gradually got a special importance thanks to its antioxydant properties.
The carotenoids to which belongs beta-carotene are these yellow or orange pigments which give their colors to the fruit and vegetables such as carrots and apricots.
Confusion between beta and Vitamin A is due to the fact that Beta has the capacity to change itself in the organism into Vitamin A.
It is mainly stored in fatty tissue and it is metabolized if necessary in retinol (Vitamin A) in the presence of fat in the intestinal tissue.
An excess of beta-carotene in the body is not dangerous, contrary to an excess of Vitamin A.
It is a powerful antioxydant (even more effective than the Vitamin A), it neutralizes many free radicals, including the "singoletto" oxygen that is responsible for genetic deteriorations inside the cells (the lipids, collagen, the DNA) and thus, to cause cancers.
It also gives a pigmentation to the skin and thus, prevents the damage caused by the ultraviolet rays.
