The researchers’ recent work inserted in the same category of health food, two drinks apparently extremely distant one from the other. If the presence of the tea is not truly a surprise, so much this food conveys with it this image, the red wine is a surprise in the scientific community where they have prejudices and logic use. Who could have thought that it would be recommended by doctors? It is however almost what currently occurs!

- The tea -

It seems that the tea, which we imagine of Chinese origin, borrowed the road of silk, imported in India by Buddhist monks. It is cultivated in China since IVth century before our era but Europeans discovered it only at the XVII century. It is the drink the most consumed in the world after water, three quarters in the form of black tea (which underwent fermentation), the quarter in the form of green tea (obtained by a fast drying of the sheets). One French in three, one Frenchwoman in two, drinks it very regularly.

Composition
It has a very weak caloric capacity since one cup generates only two caloric. It contains neither salt, neither sugars, neither proteins, nor greases, but on the other hand alkaloid substances, the theobromine and the theophylline which have a dilating action on the coronary arteries.
The caffeine content caffeine of tea is not null since it is close to the Arabica (variety of coffee) but the tannins precipitate it in the stomach and limit its absorption thus: it brings less than half theine or caffeine than the same quantity of coffee.

The tea whether black or green contains flavonoïdes, antioxidants very powerful which confer a great part of its properties . The black tea also contains tannins which has a more marked taste to him.

Caffeine decreases the feeling of tiredness, prevents from sleeping through its exciting action, supports the intellectual work, increases the heartbeat rate, and facilitates the digestion and the emission of the feces...
With strong amounts it is the reverse, it involves mental confusion, tremor, irritation, palpitations...
Moderate caffeine consumption, around 300 Mg corresponds approximately to seven cups of tea or three coffee cups. A tea described as light, infused little time, is richer in caffeine than a tea supposed extremely, which is infused a long time. This one is certainly darker, bitterer, but only because it contains many types of tannin which have in fact quickly precipitated caffeine.
If you wish to take a tea in the evening, let it infuse it longer so that it does not interfere the sleep.

Properties
• the presence of flavonoïdes and tannins appear among very antioxidant drinks.
• The regular consumption of tea decreases by 60 ° % the coronary risk disease as it has action, neither on cholesterol, nor on the L.D.L. (the bad one). the reduction of the risk have as an explanation a clean anti-thrombotique action.
• The green tea, inhibits the growth of several types of pulmonary tumors and cesophagiens. Its consumption has a weaker incidence on human cancers . One of the components of the green tea prevents the growth of new vessels, which is interesting for example vis-à-vis with cancers and against retinitis diabetic.
• It prevents in the animal the development of certain skin cancers induced by an exposure to the U.V. (Ultraviolet). The frequency of digestive and urinary cancers would be decreased by 40 à.70.% for people who drink more than two cups of tea per day compared to those who do not drink any.
• It is moreover general tonic cerebral, soft, useful stimulant in the tired people, convalescents.
• It is very diuretic.
• The Tuocha tea, produced in the Chinese province of Yunnan, has the reputation to eliminate greases and to decrease the figures of cholesterol.

The beneficial properties of the flavonoïdes would become effective only starting from five cups per day, even if a cup of tea brings antioxidants as many as a vegetable plate.

Caution
- It inhibits partially iron absorption contained in the fruit and vegetables. This can be counterbalanced by the addition of products rich in vitamin C.
- If you drink too hot, it would on the other hand have a role supporting cancers of the esophagus...

Tea preparation
It is more or less a ritual depending on places.
- You take your teapot you heat it by rinsing it with ebullient water, that you pour water. You take a spoon of tea , plus an amount for the pot. You pour hot water but not boiling, you cover, you let it infuse approximately one minute, and you are ready.



- The wine -

This drink, obtained by fermentation of the grape, is used by all civilizations since Antiquity. It is useful throughout the centuries, to get drunk of course, but also to be refreshed since long time it was less alcoholic than today and generally is served crossed water. The wine takes truly its rise in 1850 with the development of the railroad and the possibility of distributing it everywhere in France.

It accompanies now the meals and it became almost sacrilege to add water to it. It is useless to insist on image of our high-class wines known and appreciated everywhere in the world. It is pleasant to note that they are, in condition of being consumed moderately to be of , of marvelous food-health.

The French drink mainly during the meals and especially wine, the Americans drink much beer and apart from the meals, which already at least partly explains the "French-paradox".

Composition of the wine
It is rich in water, with a content ranging between 80 and 90 %. It contains variable quantities of ethanol: a wine labeled 12° brings 120 ml , which corresponds to 100 grams of alcohol. One liter of wine with 12° generates consequently 700 caloric. The wine is an acid drink. It is rich in minerals, especially potassium (around one gram per liter) and iron (10 Mg), but also magnesium and calcium (70 Mg).

It is on the other hand very low in vitamins. But it contains several very active principles, which confer its antioxidant properties : tannins, the polyphenols (of which the pycnogénol) the organic acids with bactericidal capacity, and especially flavonoïdes.

- The resvératrol : it is one of the flavonoïdes wine, released at the time of fermentation. It has a powerful antioxidant activity which increases the H.D.L. (good cholesterol) by inhibiting its oxidation. This substance also has antifungal virtues, i.e. it is effective against the mushrooms which tend to develop with the autumn in the wine. The climate intervenes besides on its production, "Burgundy" from fresh and wet areas produces more resveratrol produce that the California one.

This compound is not present in sufficient and effective quantities in the grape juice. It tends to decrease with the age of the bottle, which makes the great vintages much less protective on the cardiovascular level. The virtues of Cabernet-Sauvignon have just been the subject of a publication in the British review "Heart". They contain great quantities of resveratrol.

The skin of the grape contains the flavonoïdes. During the manufacture of the red wine, alcohol dissolves them, which gives to the wine its savor and its properties for health. For the production of white wine, the skin is withdrawn, and with it the major part of the protective flavonoïdes.

Properties
• It protects the heart and the vessels, decreases bad cholesterol, prevents from depositing it, it fluidifies blood, it is very anti-incorporating plate which reduces the risk of clots.
• It is anti-allergic.
• It is anti-inflammatory drug.
• It protects fibers from collagen.
• It behaves like a weak hormone, which could explain its protective action against certain hormonal cancer.
• If you drink in moderately it will be the only drink which would protect from cancers oro-pharyngs cancer.
• The wine brings conviviality when taken with a meal, takes part in our physical and moral health.

The red wine out of barrels of oak would be better for the heart than that which to age in stainless tanks because it contains more tannins and phenols.

Caution
- It is very calorific.
- because of its acidity it is misadvised with all those who suffer from hyperacidity (burns, gastritis, ulcer...) especially if it is absorbed during a fast.
- It is even misadvised contra-indicated for those who suffer from venous disorders (hemorrhoids, varicose veins) because alcohol aggravates the phenomenon of vessels dilation.
- Alcoholism is a true plague which one should not under any pretext encourage.

The double game
A red wine diluted in the hundredth always presents an antioxidant activity higher than the vitamin E Beyond one wine glass per day which is the amount recommended by doctors, the increase in consumption is accompanied only by weak reduction in coronary mortality. Beyond a quantity which can be fixed at five glasses per day, the cardiovascular toxicity of alcohol takes the step on the advantages with weak amounts. The alcoholic drinks with strong amounts increase the risk of early cancer mortality, vascular accidents cerebral, cirrhosis, violent death... but they protect the heart by reducing by 20 to 60 % cardiovascular mortality. Alcohol prevents the clots but supports the bleedings, which we already know thanks to the studies carried out on Eskimos.

A study undertaken by the team of the pr. Renaud on nearly 36 000 inhabitants in the East of France has just confirmed the beneficial effects on health from a regular but moderate wine consumption. With the proviso of not exceeding three glasses per day for men and half a glass for the women, it is observed a reduction in general mortality of about 30 %, that is to say approximately 40 % for the cardiovascular risk and 20 % for cancer. Equivalent quantities of alcohol brought in the form of beer do not have any favorable action on the other hand. Beyond three wine glasses per day, an on-risk of cancer appears.

A slogan used by the road prevention was successful, it remains more than ever a current topic: "one glass per day is ok but three glass brings problem"

TO BETTER USE ANTIOXYDANT DRINKS :
If it is out of question of obliging somebody to drink wine, especially if he does not like it, we can only encourage the others to take small glass of red wine in each two meals and drink a cup of tea not sweetened, not too hot, twice a day.
